This pulls out the pages you name into a new PDF, leaving your original untouched. Enter something like 2, 5-7 and you get just those pages.
This is the tool for sending someone only the part that concerns them — the signature page of a contract, one statement out of a year, or a single chapter from a manual.
Pages come out in the order you list them, so you can reorder while extracting.

What is the difference between this and Split?
Extract gives you one PDF containing the pages you chose. Split breaks the whole document into several files at once.
Can I reorder while extracting?
Yes. Type them in the order you want — 5, 2, 9 produces a PDF with those pages in exactly that sequence.
